Seven Layer Dinner and Snowball Doughnuts

Mainers are known for their ability to make something out of almost anything we have around us! This pertains to making dinner (or supper, as we still call it); below is a recipe for seven layer dinner, something that has a little bit of everything. Try it out and let us know what you think!

If you like doughnut holes, this recipe for snowball doughnuts is a delightfully simple version of them! It’s a quick dessert that can be made and easily transported.

Seven Layer Dinner – Rhona Barrie, MASP

Ingredients
  • 1 layer sliced raw potatoes
  • 1 layer sliced onions
  • 1 pound lean ground beef
  • 1/2 cup uncooked rice
  • 1 can tomatoes
  • slices of green peppers, celery, and mushrooms
  • slices raw bacon
Directions

Use small, covered roaster or a large casserole dish. There is no advance preparation to this recipe.

Place a layer of raw potatoes in bottom of casserole, then the onions. Spread the raw ground beef all over onions. Season with salt and pepper as you go along. Sprinkle raw rice all over the ground beef, then the canned tomatoes. Add the slices of green pepper, celery, and mushrooms. Lay slices of raw bacon on top.

Add enough cold water to casserole so it comes to top of ingredients. Cover and bake at 350 Fahrenheit (175 Celsius) for 2 hours.

 

Snowball Doughnuts – Cooking Down East

Ingredients
  • 2 cups biscuit mix
  • 1 cup applesauce
  • 1 egg
  • 1/2 teaspoon nutmeg
  • 1/2 cup confectioner’s sugar in a fresh paper bag
Directions

To make your own biscuit mix, use 2 cups sifted all-purpose flour, 4 teaspoons baking powder, and 1/2 teaspoon salt. Sift together and cut in 2 tablespoons of shortening. You may also used packaged biscuit mix in this recipe with equally excellent results.

Measure biscuit mix by spoonfuls into measuring cup. Turn into bowl, stir in nutmeg, add unbeaten egg and applesauce, mix together.

Have hot fat ready. If you do have a thermometer, use 375 Fahrenheit (190 Celsius) Dip by small teaspoonfuls, fry in hot fat until evenly brown. They just about turn themselves as they fry.

Drain on paper towels. Have the 1/2 cup confectioner’s sugar ready in the paper bag. Allow doughnut balls to cool about 20 minutes, then shake them up in bag to coat into snowballs. Serve with hot coffee.
