Bean Pot Chicken Breasts, Molasses Whoopie Pies
Fall in Maine means many wonderful things to people. Among these are hearty meals and plenty of sweet desserts! Today, we are bringing you some delicious recipes for those.
Baked beans are a New England classic. But bean pots can be used for more than just rich and filling beans; in this recipe, you will be able to cook chicken breasts in one! Don’t worry–if you don’t have a bean pot, you can use a heavy-covered casserole dish too!
Bean Pot Chicken Breasts – Cooking Down East
Ingredients:
- 1 stick of butter or margarine
- 4 or 5 chicken breasts, halved
- Salt, pepper, and poultry seasoning
- 1 peeled onion
Instructions:
Using your bean pot or a heavy-covered casserole, place the stick of margarine in the bottom of it. Place the whole peeled onion next.
Prepare chicken breasts for cooking. If you take advantage of the chicken sales, you probably have bought breasts with attached wings. Remove tips of wings and disjoint wings from breast halves and cook separately in a bean pot. Leave the skin on breasts and wings.
Salt and pepper chicken, sprinkle with poultry seasoning. Lay the bone side up on top of margarine and onion. No browning, no water. Cover bean pot or casserole. Place in 300 degrees [Fahrenheit] oven [(150 degrees Celsius)] and bake for about 4 hours. You could even use 275 degrees and a 5-hour period. Isn’t this great?
[To serve with rice,] use 300 degrees [Fahrenheit] and, in the last hour, place rice in the oven to cook. Use a covered casserole with twice as much water as rice. That’s it.
Molasses Whoopie Pies – Linda Phillips, MASP
Ingredients (cake):
- 2/3 cup shortening
- 2 eggs
- 1 cup water
- 1 tsp. salt
- 1 tsp. cloves
- 1 cup sugar
- 1 cup molasses
- 4 cups flour
- 2 tsp. ginger
- 2 tsp. baking soda
Ingredients (filling):
- 2/3 cup Crisco
- 2/3 cup sugar
- 1/3 cup canned milk
- 1 Tbsp. cold water
- 1 tsp. vanilla
Instructions (cake):
Cream together shortening, sugar, and eggs until well blended. Stir in molasses and water. Add remaining ingredients. Mix well. Do not grease the tin. Drop by rounded teaspoonfuls—Bake at 350 degrees [Fahrenheit (175 degrees Celsius)] for 10 to 12 minutes.
Instructions (filling):
Beat 10 minutes. Chill and fill.
