Moran quoted in BDN article about keeping apples crisp
The Bangor Daily News interviewed Renae Moran, a University of Maine Cooperative Extension fruit tree specialist and professor of pomology in the School of Food and Agriculture, about preserving the flavor and crisp texture of fresh picked apples. She noted that apples harvested before they are completely ripe will maintain their crisp texture better in storage while those picked at the end of the season have better flavor that is more difficult to maintain over time.
