The Portland Press Herald published an interview with Mary Ellen Camire, director of the UMaine Sensory Evaluation Center and professor of food science and human nutrition. Camire’s research focuses on the relationships between consumers and Maine-specific food commodities, like seaweed, potatoes, berries and grains.
