Camire Talks Potatoes in USA Today

UMaine food science and human nutrition professor Mary Ellen Camire was interviewed for a USA Today story about potatoes and school lunches. Camire, who is also the spokesperson for the Institute of Food Technologists, said potatoes may help lower blood pressure because they are rich in potassium, which can balance out sodium in a diet.
