WMTW (ABC 8 in Portland) interviewed Kate McCarty, food systems professional at University of Maine Cooperative Extension, on alternatives to baking with eggs now that the cost has soared and availability has dropped. “The biggest surprise was that they all worked and then worked well enough where I would do it. So, there wasn’t a fail,” she said. “All of them were successful.”
