UMaine Dining launches ‘Chef’s Table’ at Bear’s Den Sept. 28

University of Maine Dining will launch a new monthly series, Chef’s Table, on Sept. 28. The event in the Bear’s Den in the Memorial Union will feature one of UMaine’s executive chefs hosting a themed tasting showcasing locally sourced ingredients. 

The series launches at 2 p.m. with UMaine Dining executive sous chef Todd Chasteen creating beet bruschetta with UMaine microgreens grown on campus and Pineland Farms feta cheese, and homemade hot smoked pepper-crusted salmon with cucumber-dill salsa. The event is free and open to the public. 

Additional Chef’s Table events are scheduled for 2–4 p.m. on Oct. 26; Nov. 30; Jan. 25; Feb. 22; March 29; and April 27 in the Bear’s Den.
