Foraging for edible plants is a fun, essential skill for outdoor enthusiasts of all levels and abilities. You never know when you are going to need to use it. Eastern White Cedar
This video holds true for all evergreens in Maine. They can be made into a tea, and are a good source of Vitamin C.
Dandelion Leaves
You can cook these leaves up just like you would with spinach. You can also eat them raw, but if you cook them you can try adding some of your favorite seasonings. (Note: This video was produced during a fall semester class, so we were recording in November. But dandelion greens are better in spring!)
