Brett Heidtke

Brett’s presentation will explore Haddock processing from incoming raw material through the finished fillets ready for retail sale. He will identify the steps in the process that produce waste, or what is called by-product, discuss equipment capabilities and production methods used in handling at each step. He will discuss the use of Bristol Seafood’s by-products in retail stores, as well as with partners in the pet food and cosmetics industries. From skins and bones to off-cut fish trimmings, 100% of the raw material is utilized.

Brett Heidtke has over 25 years of experience in the seafood industry.  Brett began his career in 1999 as Plant Manager of the Elgin, Illinois facility for Sonoma Seafoods focusing on Value Added Seafood.  He joined Slade Gorton in 2010 and relocated to Massachusetts with his family in 2012 to serve as Plant Manager for their Boston facility.  In 2015, he joined Stavis Seafoods as Director of Operations.  Most recently, in 2019, he joined Bristol Seafood as Vice President of Operations and was promoted to Chief Operating Officer in 2020.
