Ingredients:

1/2 cup chopped onion
1 tablespoon oil
2 cups tomatoes, chopped
1/2 teaspoon pepper
1-1/2 cups low-fat cheese, shredded

Directions:

  1. In saucepan, cook onion in oil until tender.
  2. Add tomatoes and pepper and heat.
  3. Add cheese and heat slowly until melted.
  4. Can be served on toast, rice or pasta.
